What is KUMOSUKE?KUMOSUKE means people who worked at a post town or along the main road in Edo era as a baggage carrier, a boat driver or a palanquin carrier.
High quality ingredients We use 100% Koshihikari rice from Niigata prefecture. Cooked every morning without any additional glutenous rice or rice flour. We change the amount of water every season so that our ODANGO (dumplings) always keep their soft but chewy texture.
ANKO (sweet bean paste) We lavishly use high quality red beans from Hokkaido prefecture. With a mild and smooth flavour, it’s suitable for everyone, not just those with a sweet tooth.
MITARASHI (sweet soy sauce syrup) We use naturally brewed aromatic soy sauce made from unprocessed Japanese soybeans.
We also use other seasonal foods and carefully selected ingredients.
Variations of flavourClassic ANKO. Sticky sweet MITARASHI. Black sesame & KINAKO (soybean flour) with a roasted aroma and light sweetness. Black sesame pastes with a strong sesame flavour. Unique bamboo charcoal flavour. Yolk egg paste, slightly sweet. Seasonal menu Cherry-blossom or Chestnut flavours. We are sure you will find your own personal favourite.
Fresh tastingWe cook rice every morning in our kitchen and serve it fresh. For those eating in, we only start to prepare our paste after receiving your order. So, you can watch us prepare. Please try and enjoy our food in the shop.
